Behind the Bean:
In 2019, SNAP Specialty Coffee built a wet mill in a tiny pocket named Danache within the lush forest covered Chelbesa Village to process coffee for 476 smallholder farmers in the immediate area around it.
Once hand-harvested ripe cherries were floated for density and quality, the outer skin and about 50% of the mucilage were removed from them. They were then dried with mucilage intact on raised beds in partial shade, hulled and stored for export.
This truly unique Ethiopian coffee boasts an impressive cupping score of 87. True to its origin, it offers beautifully complex flavours that set it apart. When brewed as a filter, distinct notes of litchi and strawberry shine through, layered with delicate floral tones reminiscent of jasmine. Thanks to its honey processing method, this coffee also pairs exceptionally well with milk, revealing a creamy, smooth strawberry sweetness in the cup.
