The Farm
Finca Las Guineas, led by Fabian Murcia, has partnered with specialty coffee producers Elkin Guzman and Rodrigo Sanchez to boost production and expand crop growth. Known for its pioneering work with Geisha variety coffee, the farm is gaining market recognition and focusing on sustainability. Located in Isnos, Huila, at 1,900 meters above sea level, Finca Las Guineas benefits from volcanic soils and a favourable climate, creating an ideal environment for coffee cultivation.
Processing Method
Coffee cherries are harvested at 24°–28° Brix and pH 5.6–5.9, fermented in collection bags for 24 hours, floated to remove impurities, and slowly sun-dried for 5–6 days before finishing under shaded canopies for 20–25 days to achieve optimal drying.
We always try to be intentional about our selection around Colombian coffees, unique, complex and unforgettable, and this one is no different. Despite this coffee being naturally processed, it remains structured, balanced and clean when brewed on filter or V60. We picked up notes of fig, juicy guava and sweet ripe red apples that lingered on the finish. For milk-based drinks, we settled on a slightly longer extraction ratio (1:2.2), producing a balanced, expressive shot that carries effortlessly through milk. The result is silky, smooth and sweet, reminding us of a classic toffee apple treat.
