El Mirador, located in Palestina, Huila, Colombia, is owned by Elkin Guzman. The farm grows a variety of coffee plants, including Catiope, Mokka, Gesha, Bourbon, Caturra, and Tabi, a variety developed by Cenicafe in 2020. With 13 years of experience, Elkin and his team focus on improving coffee quality for consumers worldwide. The 31-hectare farm benefits from sandy-loam and clay-loam soils, using semi-shade systems to optimise temperature and photosynthesis.
Caturra Honey coffee is carefully hand-selected through sieves to remove underripe and overripe cherries, then aerobically fermented in plastic barrels for 96–120 hours before pulping and drying for 18–25 days to develop enhanced sweetness and complexity.
This exceptional Colombian coffee is one we’ve been especially excited to share. With a cup score of 86, it delivers a beautiful balance of acidity and sweetness, brought together through a vibrant and intriguing flavour profile. The aroma is intensely sweet, and when brewed on filter, you can expect notes of candy-like sweetness layered with lemongrass and subtle hints of honey and mint. As an espresso with milk, it transforms into a smooth, creamy experience—reminiscent of a rich lemon bar cake.
